Did you know today is National Peanut Butter Cookie Day? It may be a little-known holiday, but I’ll take any opportunity to celebrate peanut buttery baked goods.

And if you’re still looking for the perfect traditional peanut butter cookie? Mix a cup of peanut butter, a cup of sugar and an egg to make the dough, then bake them at 350 degrees for about 10 minutes. Simple, delicious (and gluten-free)!
