1. Celery Root Soup with Truffle Oil
Have you had celery root in pureed or soup form? Have you? If you have, you know it’s an absolute delight, velvety and creamy and decadent and good for you. Consider celery root soup with truffle oil. (Yes, we have the latter!) It’s whoa-nelly good, requires a mere 10 minutes of prep, and is hearty enough that you can serve it with crusty bread and a charcuterie board and skip the rest of this menu, if you wish!
2. Endive & Apple Salad
Endive and apple salad is as luxe as salad gets thanks to those fat wedges of blue cheese and a bunch of candied walnuts. Wintry as all get out, Belgian endive is very slightly bitter and wholly gorgeous. The cheese balances out the whole, as do a light lemon-Champagne vinegar dressing and apple petals.
3. Gruyère & Parmesan Souffle
Have you ever thought to make a soufflé at home? If an entrée could say “BOOM” as it hits the table, a soufflé would. Gruyère and Parmesan soufflé looks gorgeous towering over its mold. 4. Pear & Frangipane Tart
