Bibimbap, which means “mixed rice,” is a popular Korean dish of white rice, mixed vegetables, sliced beef and a fried egg. This lightened-up meatless version omits the meat and swaps the white rice for whole-grain brown rice instead.
These eggs, which are baked with paprika, spinach and heavy cream, are a wonderful way to start off the day. Bake them until the whites are firm and the yolks are runny, and serve them with toast for dipping.

This hash is a wonderful way to make use of leftover cooked potatoes and brussels. It’s also a complete meal that feels appropriate for any time of day.
|Chicken, Spinach and Avocado Breakfast Quesadillas
Quesadillas—particularly these, which are stuffed with chicken, avocado, tomato, spinach and scrambled eggs—make for a hearty snack any time of day.
