Tomato-Braised Chicken with Capers
Braised chicken is a great choice for an easy weeknight meal, and using bone-in, skin-on chicken helps keep the meat from drying out and yields the best flavor. Though the recipe calls for capers, you could just as easily slip in some pitted olives instead. Serve the chicken with softly cooked polenta, steamed rice, or a good loaf of bread for soaking up the flavorful braising liquid.
Salmon Provençal with Fingerling Potatoes & Cherry Tomatoes
Fish is one of the easiest weeknight dinner options. Though salmon is featured here, you could easily swap in another firm-fleshed fish fillet such as halibut, sea bass, or cod. One simple sheet pan is also key to the meal’s charms. Pop the whole thing into a piping hot oven for just 20 minutes, and dinner is served! We love that the starch and veggies go right on to the pan with the protein. Cleanup can be a snap, too, especially if you use our favorite trick: parchment paper.
For a traditional Italian version of this hearty vegetable soup, garnish each serving with a spoonful of store-bought pesto if you have it on hand, which adds an herbaceous note to the simple dish. Round out the meal with a loaf of crusty Italian or whole-grain bread.
