Greek yogurt is strained, making it thicker than other types of yogurt. Even when made from low-fat milk, it has a lush, silky texture and a fresh, tart flavor. Plain regular yogurt will also work well, or you can thicken yogurt yourself by refrigerating it overnight in a sieve lined with cheesecloth set over a bowl.
Yogurt Parfaits with Fresh Fruit & Honey
Ingredients
- 1/4 cup (1 1/2 oz./45 g) sliced almonds
- 2 2/3 cups (18 oz./560 g) plain Greek yogurt
- 4 cups (1 lb./500 g) coarsely chopped fresh fruit such as plums, peaches, nectarines or figs
- 4 tsp. honey
Directions
1. Preheat an oven to 350°F (180°C). Spread the almonds on a baking sheet and toast until fragrant and just turning golden, about 3 minutes. Remove to a plate to stop the cooking, and let cool.
2. Spoon 1/3 cup yogurt into bottom of a large goblet or parfait glass. Spoon about 1/2 cup of fruit over yogurt. Sprinkle with 1/2 Tbs. almonds and drizzle with about 1/2 tsp honey. Repeat the layers, ending with the honey. Repeat to assemble 3 more parfaits. Serve at once, or refrigerate for up to 2 hours. Serves 4.
