If it weren’t for a happenstance meeting, Salted Peppermint Bark might’ve never happened. Neil Lick, who oversees Williams-Sonoma’s food development team, recalls how the idea came to fruition: “One of our most popular items is Jacobsen Salted Caramels, created in collaboration with salt harvester Ben Jacobsen. Ben and I were talking about other ways to capture that sweet-salty taste profile, and I suggested that a little bit of pure flake salt could cut through the sweetness of our Peppermint Bark. Some of our team was skeptical, but a few weeks later, samples arrived and sure enough, everyone who tasted it immediately fell in love with it.”
