The bright flavors of citrus, mango and ginger shine in this sunny orange smoothie. If you’re short on time, don’t worry about peeling the fresh ginger root: just rinse it well and run it crosswise through a fine grater.
Rise and Shine Smoothie
1 ripe mango
3⁄4 to 1 cup (6 to 8 fl. oz./180 to 250 ml) fresh orange juice
1⁄2 cup (4 oz./125 g) vanilla nonfat yogurt
1/2 tsp. peeled and grated fresh ginger
1 Tbs. honey
1 Tbs. fresh lime juice
Hold the mango upright on a cutting board. Using a sharp chef’s knife, make downward cuts along each flat side of the pit to separate the pit from the flesh. Remove the skin with a vegetable peeler and cut the flesh into chunks.
In a blender, puree the mango, 3⁄4 cup (6 fl. oz./180 ml) of the orange juice, the yogurt, ginger, honey and lime juice until smooth. Add up to 1⁄4 cup (2 fl. oz./60 ml) more orange juice as needed to reach the desired consistency.
Pour into glasses and serve immediately, or transfer to insulated beverage containers and take to go. Serves 2.
