I have a large family and we all use eggs in different ways! My 11 year old daughter enjoys a french egg mousse that uses eggs, a bit of sugar and melted chocolate. Yum!! Our 23 year old son enjoys Pho and Ramen, so when he cooks we all get to enjoy hard or soft boiled eggs that add flavor, texture and depth to the soups. We use about 3 to 5 dozen eggs a week on average and during holiday or birthday times, we use up to 8 dozen! Who doesn’t enjoy a good fresh egg?

My neighbors have graciously given me some eggs in the past. **I think my favorite meal is simple over medium fried eggs with fresh zucchini out of the garden and a small piece of Elk stake.
Our older son wanted chickens so he’s had them since April. We have six Americaunas and six Silver-Laced Wyandottes. Now, our younger son plans to get Old English Bantams. The eggs that we now get taste much better than store-bought eggs!

Knowing where your food comes from is not a luxury, but a necessity. What is more basic than the chicken and the egg?
Start with good jowl grease and reserve fried bacon in strips. Crack two eggs sunny side up and allow to fry until crispy edges are evident. Prepare two corn tortillas with a slice of favorite cheese in each. Add two strips of bacon and flip eggs onto the prepared tortillas individually to fry on pan in jowl grease until edges are browned. Garnish with fresh basil leaf and favorite Rooster Sauce. Enjoy without cutlery.

This comment may not be as interesting as some of the others, but we like to use our eggs to make dozens and dozens of hard-boiled eggs to feed the homeless. They love and appreciate them more than anything you could give them…….Would love to have the eggs right in my own back yard…it would sure simplify things and help with the cost of the eggs
This is last year’s contest with 2012 dates on it. I am surprised to be getting this offer with all this wrong information on it,but since my comment from last year is still on here…..use that one or this one to re-enter me in the contest if, indeed,this is a 2015 contest. The sweetest & smoothest tasting eggs are the ones that come directly from my backyard from my Rhode island reds! OMG I’m so excited over this contest! I have a coop for a few of my chickens, but I have 7 more that I’m in a rush to do something for them before winter arrives here where I live in Michigan! My fingers and toes are crossed! lol
We are looking forward to our first chickens in the spring and have cleared a space for them by taking down old dead trees. Now we need the coop! My husband was in charge of the chicks as a young boy in upstate NY and, now that we are retired, is excited about fresh eggs to go with the new garden plot for tomatoes other fresh veggies. There is nothing like raising your own food and knowing where it came from. I am so happy to see so many families going off the supermarket grid. It is good for you and good for the planet!

My household consumes 3 dozens eggs per week. My favorite way to have them is fried served over grits with crumbled bacon topping. My newest creation is an egg benedict. I replace the hollandaise sauce with a chevre and goat cheddar white sauce….yummmmmm!

In our house, we love our eggs scrambled, fried, boiled, poached in milk and then the eggs and milk over toast. We use them in many recipes such as cakes, meatloaf, Deviled eggs and many more dishes. Having our own chickens and fresh eggs every day has been a dream of mine for many years. I had them for a short time as a kid, but my parents didn’t keep them for long and I don’t remember why. Now that I am married and a mom, I would love to have them myself. God knows and will provide in His time and His way.

I love fresh eggs, probably because I was raised in a farm and used to have my own chickens as a kid… I love boiling an egg for a snack at 4:00 o’clock or having some in an omelett with a fresh salad. These are the way I enjoy them the most!

I use eggs for everyday cooking. My favorite is an egg sandwich.
Right now we are working hard to find egg recipes that my two oldest girls love. They want chickens so badly, but neither one of them likes eggs that much – go figure. I told them that we are on a mission to find new recipes to help them love their eggs and that cookies and muffins didn’t count. =) So far Mexican eggs and an Egg pizza are the favorites. There is nothing better than an egg over easy with toast spread with real butter on a Saturday morning. Your chicken coops are beautiful! We have voluntarily hosted the Mosquito Abatement district chickens at our house for years. After summer testing we move them to our coop and they are ours to keep. We love to let them roam free during the day but lock them up at night for their own safety. Such a joy it is to watch them mingle with our rescued cats! Alas our coop is falling apart and due to the economy it looks like we must stop saving and raising chickens. As heartbreaking as it is, we simply cannot afford to build a new coup right now and our is on it’s last legs. We would surely appreciate the opportunity to win one of your gorgeous coops for our pretty ladies, they deserve the best!

I love chickens, eggs and the whole idea of having them in the city. It’s so interesting that my parents grew up in the country, on working farms and their idea of success was to get away from having to deal with chickens, dirt, and so on…My idea of success is being able to get back to what they had and got away from in order to make a living. Time always recycles back around. What a gift it is that our generation is interested in these things again!

I eat eggs every morning for breakfast in many different ways. Today was fresh broccoli from the garden, peppers, onions, cheese and eggs with a little goat cream cheese mixed in over corn tortillas, yum! Always the best breakfast to start a labor intensive day!

As a child I have always loved chickens. When I was about 10 yrs. old a neighbor woman gave me a hen and I put her in a little pen. Everyday when I would get home from school I would run to see if my little hen had laid an egg. Whenever, I found an egg I would make cookies.I loved to cook as well. I really like farm fresh eggs for omelets and quiche. Oh! I would so love to win this little chicken house for a hobby, since I am retired.

Eggs in a Basket: With a large circle cookie cutter, cut the center from a slice of bread. Melt butter in skillet and place bread ring. Crack egg in center and cook as a fried egg. Brown the center bread in the skillet for extra toast.
I enjoy fresh eggs in my Eggs Benedict Neptune, with fresh smoked salmon, and homemade hollandaise Sauce. When the eggs are fresh, the whole dish tastes better.

I love to use fresh eggs from my friend’s coop to help teach my two children what good food ought to taste like. In teaching them to cook, the first thing they learn on the stovetop is delicately cooked scrambled eggs. And I make sure I do the Julia Child voice! I need my own coop!

In a scramble with all color potatoes and fresh garden greens, when making fresh whole food ingredient dog food for my furry friend, baking flax seed muffins and quinoa cakes, and as the main source of protein in my otherwise vegetarian stir-fries and fried-rice dishes. We make all sorts of good eats with eggs. Though I have to say my favorite is still a good old fashioned “dippy egg”! Fully cooked white with sunny side up, toast and juice or hot chocolate!…yummy! I make them every weekend for my family! My little girls would love to go and collect fresh eggs first! We recently were able to move outside of the city and we are all so excited to get to live a little bit of a country life! We have decided on 4 buff Orpingtons…to start! The coop is next on our list and as I have been looking at various ones, I really like the exterior nesting box for ease of collection and cleaning!
We have a barn – now all we need is this coop! My favorite way to use fresh eggs is to fry them in a little oil (in my d5 fry pan of course) and lay them over a fresh salad with some shaved Parmesan cheese, salt and pepper!

Farmer’s Omelet-18-24 eggs in a 1-21/2 qt Corning baking dish, add milk, mix with a fork. Add any or all of the following: cooked bacon, ham, & potatoes; green pepper, red onion, asparagus, broccoli, cooked spinach, cherry tomatoes, or anything else that comes out of the garden. Add a dash of salt & pepper, paprika; fresh parsley, any white cheese to your liking. Bake @ 350 until it is slightly browned on the top. Make two for Sunday Brunch!!

I remember going to my Grandparents and they always had fresh eggs. The yolks were so creamy and rich. I have wanted to raise my own chickens but always put it off. Time to take this off the bucket list.
I have looking for an opportunity to get into raising chickens. I had gastric bypass surgery 13 months ago and have lost over 180 pounds. Protein is a very important part of my new diet. I love nothing more than eggs for breakfast! You can scramble, or poach, or omelet with veggie or egg benedict. It gives me such a whole rich energy for the day to start. We Japanese also put raw egg york on freshly cooked rice over with little soy sauce as well.

There isn’t anyway I don’t like eggs. Choosing a favorite is difficult…I recently created a banana souffle that was pretty amazing, but does it outrank a great pound cake? A spinach and crawfish frittata? Who can say? Eggs are the ultimate, perfect food alone or as an ingredient.

My favorite way to use fresh eggs is during wild mushroom season. After foraging for chanterelles and porcinis, you take little ramekin dishes, fill the bottom with chopped mushrooms, butter and garlic. Then, crack an egg ontop. Salt and pepper, bake in the oven for 10-15 minutes until egg whites set. Sprinkle with parsley, and you can eat this for breakfast lunch or dinner!

We use eggs on a daily basis for scrambling….I like to add in cheese, ham, sauted onions, and zucchini (preferably home grown). My teenage son can eat 6-8 eggs in a sitting!

It’ is a simple answer, maybe boring but one that was a favorite of my dad’s… an egg in the hole which is simply a pan fried piece of bread/toast with a piece of bread pulled from the middle creating the hole, then frying an egg on top of the bread. It was a favorite of my dad’s and one that creates good memories for me since he has passed as I make the same thing.
Omlet’s with fresh variety of gently sauted vegetables (i.e. onion, pepper, broccoli, yellow squash, etc.) is the best! Put a little green verde sauce over it, makes it even better!

These coops are gogeous! I would love to show them off when my friends roll up for brunch with their favorite ham and asparagus strata!! The eggs are the hero not only incorporated inside the dish but 20 minutes before it’s done I crack several eggs on top and cook for a few more minutes! So yummy!!!

Our family has 3 Rhode Island Red hens. Nellie, Lela & Bea. They are only about 6 months old, but are great layers! We get about 3 eggs a day.
My 2 1/2 year old son loves eggs. He goes out every morning with me to retrieve our eggs! He loves counting the eggs and telling me if they’re “big” or “little”. It’s so much fun.
Then every morning I make my son a scrambled egg with a little dill and cheese. He usually eats them with fruit. Every morning I ask Kam if he wants eggs or something else like cereal or oatmeal. He always says EGGS!

With this free chicken coop we could grow and produce our own eggs as an act of protest againt commercially produced chicken eggs. Commercial chickens live out their lives never having walked around and with barely enough room to move around. The animal cruelty of commercial chickens is horrific. They are kept in a small cage with not enough room to stand up or walk around…They sit in one spot with no room for movement and as they lay their eggs; the eggs roll down a shoot and are carried by conveyor belt to a washer. Once placed in this cage, they have to die to get out. And that is how we get our eggs at the local grocery store.
For this reason we also support Hellman’s for their recent commitment to use free-range chicken eggs in their mayonaise. They have also pledged to phase out more and more commercial chicken eggs until only free-ranged chicken eggs are used by their company. We could all learn a lesson from them.
My husband created my favorite fresh egg breakfast (or anytime) recipe: A toasted english muffin half layered with steamed asparagus, a poached fresh egg and covered with creamy chipped corn beef. So, so delicious!

I live within city limits and i have recently found out that I can have chickens. Even though my yard is small, a small chicken coop would be perfect. I love fresh eggs. My favorite way of eating them is hard-boiled. I boil a dozen eggs on Saturday, and keep them in the refrigerator. Now, they are ready anytime for a low carb, protein snack and especially for a quick breakfast on the go…..Plus, they stay fresh all week.

Our favorite is to have breakfast at dinner time. Eggs, grits, bacon, sausage and toast. Perfect supper.
Eggs are best in a baked tater. Take your leftover baked tater, cut off the top and scoop out some of the insides, add your favorite tater toppings: ham, cheese, green onion, etc. Top with a fresh egg. Bake at 350 for 10 mins or so to set your egg.

Our family loves to cook what we call eggs florentine on the weekends. A vegitarian version of the all time favorite Eggs Benedict. We poach two eggs, toast an English muffin, wilt spinach, slice a tomato from the garden, add avocado and top it off with hollindaise sauce. It is devine. I enjoy a recipe my sister shared with me. Put an egg in a cup pour milk over the egg just enough to barely cover and put it in the microwave for a minute (depending on the temp of your microwave) the egg will poach in the milk then scoop out the egg and put over a slice of toast. Yum!

As a child in Montezuma, GA my brother and I would go to the chicken coop every morning to gather eggs for the day. The chickens and roosters actually became our friends and we named our favorites! The morning meal was homemade biscuits smeared with homemade butter, fried bacon (from one of our other animal friends!) and of course eggs cooked in that wonderful bacon grease! We all lived through it and the memories live on as well.

We like to make granny omelettes with potatoes, cheese and sliced turkey. I like to use a non stick pan with a lid . I grate cheese for inside and over the top . I add a few tablespoons of water to the pan and put the lid on to melt the cheese on top. My wife likes it fancy with Hungarian paprika sprinkled on top. It’s festive and very filling.

Hmm… when it comes to eggs, my favorite thing to do with them is honestly making scrambled eggs for my boyfriend. Its so basic but it’s really a joy in my life 🙂

The coop with the planter is fantastic for sustainability! Living in Hawaii, a lot of our foods are shipped in from the States and I recently heard that sometimes eggs are months old by the time we get to eat them! A little heavy cream (or just throw your soul away and put some some soft cheese in the bottom) in the bottom of a mini-cocotte until bottom is just covered. Place an egg on top. Grind pepper/sea salt on top. Pour a little more cream until egg is covered. Sprinkle with topping of choice (crumbled bacon, salmon, ext.). Place in a 350°F oven for twenty minutes (more/less depending on your love of firmness and your oven).
Top with fresh herbs if desired and serve hot with a slice of toast.

Fresh eggs are key to an international omelette claimed by several nations. In our house they’re called ‘german’— but a liberal topping of freshly squeezed lemon juice and sugar assure their welcome on breakfast tables, everywhere. Yumm!
i like to scramble my fresh eggs and make large skillets, by adding mushrooms, onions, peppers, ham and mild spices. i scramble my eggs with salt and pepper and add some milk to make the fluffy. i saute all the vegetables , then add them to the eggs. i sprinkle shredded cheese over the top and put the lid on tight and leave it set for a few mins., off the hot burner, to melt the cheese.

We hate the ideal of commercially caged chickens providing eggs their entire life without ever being able to walk around, and barely room to move around until the day they die.We advocate buying only free-range chicken eggs…With this new coop we could raise our own eggs and thereby establish a protest against the animal cruelty inflicted on commercial chickens. We also support Hellman’s because they have heard the plight of these poor chickens. They have already started using free-ranged chicken eggs in the production of their mayonaise; and have pledged to use more and more free-ranged chicken eggs over the next few years until caged chicken eggs are phased out of Hellman’s completely.

I am a cake baker & decorator, and farm fresh eggs are a must in order to make the fluffiest, moistest cakes. There is just no comparison! I usually buy mine from the local farmer’s market, but my husand, two children, and I just purchased a small 2 acre farm. This chicken coop would make a lovely addition, as I have been researching on keeping my own chickens!
There is a big difference in taste when it comes to fresh eggs. The yolks are bright like the sun and its flavor preferred among the kids. They make the best canvas at Easter time.
It’s so hard to pick a favorite…I’m a bit torn between a roasted vegetable and pancetta quiche and the standard eggs benedict. Love them both…but the quiche is quite amazing.
Every week we buy eggs fresh from the farmer at market. I think the best way to showcase the difference between a store egg and a fresh egg is Eggs Benedict. It highlights the yolk twice in the same dish! Once in the fresh poached egg that bursts when you cut into it and covers the muffin, and again in the hollandaise sauce made with the fresh yolks and a touch of lemon juice and butter.

I think the question is how can’t you use them! I LOVE them to cook so many things! One of my favorites would have to be good old deep south deviled eggs:) Even my dogs are crazy about them! It makes their coats very shiny and gives them the omegas they need! Also- the shells are good for composting! Yum, yum, yum!

What I love most about eggs is the egg shells. I use them in my compost to nourish my garden and its great at making a clear broth for some delicious soup.

How do I love eggs? Let me count the ways! I love them as simply as when they are prepared over easy or soft-boiled with a slice of good bread to dip in the runny yolk. I love a good scramble (smoked salmon, red onion, and red pepper!) or frittata. My all-time favorite, though, has to be my husband’s amazing eggs Benedict; his hollandaise sauce is the best I’ve ever had, and served over super fresh soft poached eggs with a side of duck confit-sweet potato hash and it’s simply divine!
We currently get farm fresh eggs as part of our CSA share, but are hoping to start raising chickens of our own next spring. Our children are super excited to embark on our next foray into urban farming and winning one of these incredible coops would help us make our dream a reality.

Every other Sunday my hubby makes Fresh egg omelets at home for my son and I. We have 3 chickens. Two Buff Orpingtons and one Goldenlace Wyandotte. We live in the city of San Diego only 6 minutes from Downtown. We helped to pass the city ordinance to allow for chicken keeping in the city and would LOVE to give our chicks… Lucy, Goldie and Gidget a bigger coop. Our omelets vary but I love avocados, green chills, creme and salsa… yum.

Our favorite way to use fresh eggs is to cook them them for Sunday breakfast… for my husband, me and our dogs! It’s so funny when Sunday morning rolls around and our Lab, English Bulldog and Jack Russell are all waiting patiently in the kitchen for their scrambled eggs! I do love an over easy fresh egg with buttered toast – nothing better!
We live in the South, and if there’s one thing we Southerners know how to make, it’s deviled eggs! We make them for family reunions, for bar-b-ques, to welcome new neighbors or new babies, and for covered dish lunches following funerals. There is something about fresh eggs that just makes deviled eggs better. I think it’s the yolk — fresh eggs, just picked from a backyard coop have the prettiest, most vibrant golden yellow yolk. So when that yolk is mixed with a little mayo, yellow mustard and sweet relish, you have the perfect bite.

Scramble the eggs and half way through add sliced wedges of your favorite garden tomato allow it to cook and expel it juices into the eggs….So Yummy and simple!
Growing up my grandfather had chickens and we had fresh eggs anytime we would visit(he lived in Cross Village, MI.) Now I live on he east coast and love my neighbors chickens I really wish I had some fresh eggs of my own. I prefer eggs over easy with toast and bacon for breakfast however for dinner I love a nice quiche. What a wonderful memory this made me think of. I would love to share that experience with my children.
Received my own 3 chicks to raise in July and can’t wait to move them into a bigger home and for them to start laying but in the mean time get fresh eggs from their parents and use them in French Coconut Pie and the greatest, fluffy omelets ever!

I’ve lately been using fresh hard boiled quail eggs as a bite sized replacement to chicken eggs. Absolutely love the higher yolk to white contrast plus they are a great appetizer conversation piece at dinner parties!

When is there ever a bad way to use an egg? I realized the versatility of this wonderful food in pastry school, where fresh egg whites to whipped to white peaks of meringue, tempered into vanilla bean creme anglaise and piped into various shapes of pate choux. Once you see the farm fresh eggs with their bright yellow yolks, you will want to incorporate them into everything. Quiches, pasta carbonara and deviled eggs are some of my favorite fall egg treats!

there is nothing that does not turn out special with fresh eggs!!…but, two of my favorites are a gluten-free coconut cake that is wonderful and omlets with brocolli slaw, peppers, onions and cheese (opt) that are marvelously “fluffy” (from beating the fresh egg whites)…you cannot resist them! (unless you have just a slice of coconut cake with a cup of tea!)

As a family of three we consume six dozen eggs a week. My husband likes to use several of them in his protein shake while my daughter and I can’t go a morning without (the five yr old calls them “dipping eggs”) or softboiled eggs. We also have breakfast for dinner night, which means buttermilk waffles, bacon, and omelettes!
A few years ago we had a temporary coop with four chickens and it was a dream to have fresh eggs daily. This past spring I thought it would be great to have chickens again and our town ordinances have changed! I’ll still be able to have chickens but I will have to present plans to the town for approval and fill out some paperwork. Way to make suburban homesteading a bit harder us! I want this coop!

I work in a vets office and my coworker supplies me fresh eggs every now and then. The demand is great and they taste so fresh. From scramble to poach to baking my flour less chocolate cake to baking cookies and other goodies with my 4yr old chef. Also I’ve seen chickens become great pets 😉

I love a fresh egg in my Café au lait. It is called:”Lait de poule” Meaning chicken milk. You take the yolk, beat in 2 to 3 teaspoon of granulated sugar until white and creamy. You add a cup of espresso and mix well, then you add steamed milk. Lastly, you beat the egg white until firm and add it on top. It is delicious!!

My favorite way to prepare fresh eggs?! Is to make “dinosaur eggs” out of them!
KIDS EAT THEM LIKE CANDY, and have a fun time helping you make them in the kitchen!
Bring a pot of water to a boil, add salt (my grandmother taught me to always add salt when preparing fresh eggs to hard boil or the shell will stick, she lived to be 105 yrs old). Once my eggs are boiling, I turn off the heat, cover the pot and let them sit for about 7 minutes, then remove from water…and you will have the most PERFECTLY cooked hard boiled egg. Once cooled have your children roll/tap the eggs around on a plate, to crack the shell (do not peel them). Then in different plastic containers add water and different color food coloring. Place a few eggs in each different color and refrigerate over night. In the morning remove the eggs, peel the shells…and you will have the most amazing egg you have ever seen! Your children will scream with delight, and ask to eat eggs all the time! They are a lot of fun, you’ll have to try it for yourself!

Quiche. I have a wonderful recipe that I adapt to whatever vegetables or herbs I happen to have on hand. It’s versatile, filling and nutrient dense. It’s pie without the sugar and it’s really hard to mess one up. My favorite eggs are the poulet from young chickens which I can sometimes find at the Farmer’s Market. I’ve found them to be much tastier.
I could really use this fabulous chicken coop and it would make a wonderful Christmas gift. Nothing matches the quality of homegrown farm fresh eggs. I love to use fresh eggs to make my homemade pumpkin, almond and cranberry upside down cake. I make 20 of these cakes every Fall season!
Every holiday requires special deviled eggs, cut so that the eggs look like eyes. They are the perfect food.
The first time I had farm fresh eggs was only 3 short years ago when my friend built her own chicken coop in the backyard of her suburban Florida neighborhood. I loved the color and texture of the fresh eggs. We cooked them into the most delicious omelets which included mushrooms, fresh herbs, and fresh grated white cheddar cheese which has since been my favorite way to prepare farm fresh eggs. I now purchase all of my eggs from local farms in Northern VA, but would love to raise chickens and have fresh eggs from our own backyard. My two sons would be delighted with it as well!
We love eggs. I make a lot of strata, scrambled and sunnyside up too! They are an inexpensive way to get high quality protein into my kiddo.!
My favorite way to use fresh eggs is in a souffle – either vegetable or dessert – fluffy and airy and delicious!

My favorite way to use the farm fresh eggs is making egg muffinsfor breakfast.
My father loves raising chickens and my mother loves to cook. My mother will ask my father to go get her a “warm egg” for her bread. My dad will go out and return with a huge grin on his face and a warm egg in his hand. My father suffered a heart attack last October and he has been regaining his strength every day this past year. To win this coop would make him and my mother so happy. It would allow them to have it closer to their house and make his “warm egg” runs easier!
We use eggs everymorning for breakfest our girls love them!
My favorite is fresh eggs mixed with shredded cheddar cheese or goat cheese, a little salt and pepper. Simple is the best.
Omllettes with fresh mushrooms, green onions, cherry tomatoes, green peppers, sharp cheddar cheese and topped with homemade green chili salsa!! Our favorite brunch!
I like to fry eggs ‘sunny side up’ with bacon, some nice cheese, and some hash browns. There is no better start to the day!! :o)

I love to use fresh eggs to make something I call Egg Goulash. I cook bite-sized pieces of bacon and shredded potatoes until they are almost done. Then I crack eggs on top, add cheese, green onions, shredded cheese, and salt and pepper. Then I cover the pan and reduce the heat. About 10 minutes later, we are eating the yummiest and filling breakfast ever
I love WS coops! I don;t yet own one but i sure would be thrilled to win one! Nothing beats a fresh egg. NOTHING. Two reasons, taste and color. I like them simply poached, fried or scrambled for breakfast because you can’t match the flavor with factory eggs. I love to use them to make egg based sauces such as Hollandaise or to bake eggy breads because they turn out with a much deeper, richer color than with store bought eggs. I love eggs and I’ve always wanted a chicken coop full of cute, noisy, chickens!

Six fresh eggs, half cup bacon or ham, half cup whatever veggies I have, onions, asparagus, spinach, one cup grated cheese and my great frittata pan from W&S. Add coffee and mimosas and the paper, and there is the perfect Sunday morning.

My favorite way to use eggs is poached! With hollandaise sauce! I know it’s simple but I love egg benedict so much! I got my husband any Angry Birds “Bad Piggies” cookbook and it’s all egg recipes, so maybe I’ll find a new love!
We have awesome neighbors and are more like a close knit family. We share a neighbor garden and if we won this, we would add this to the mix of things that we share. Nothing can beat fresh!

Sauté onions, tomatoes & jalapeños (diced small), then add eggs & scramble, add a pinch of salt, serve with rice, refried beans, tortillas, and half of an avocado.

Spinach quiche
We started raising a small flock of chickens with our 5 year old who enjoys Easter everyday at our home. I asked him his favorite way to have eggs and he said fried runny on top of homemade pancakes. He said the runny yolk is better then syrup. We’ve lost half of our chickens to raccoons within this last month. We could really use a safe coop with a run! Thank you for the opportunity!

My hubby and I like to use fresh eggs in any and every way possible…for breakfast (soft poached or in an omelet)…for lunch (scrambled egg sandwich with sliced onion & mayo)…or for supper (hard boiled in a chicken or tuna salad). When we eat Chinese food out once in awhile we love their egg drop soup! We just, quite simply, love eggs! Two of our children have chickens in their yards, and we would like to join them and have some in ours! We have a HUGE backyard with plenty of room for a chicken coop. 🙂
My favorite is soft boiled eggs with buttered toast spread with Marmite (like Vegemite) and cut into fingers to dip in the egg yolks

I LOVE to “froach” my farm fresh eggs, which makes poaching sooooo much easier, and frying healthier. Clean up is a breeze, too! Here is how I prepare froached eggs, and serve them in Sweet Basil Eggs Benedict:
For Two:
4 fresh eggs from happy chickens
1 large skillet with a lid
1 Tbsp organic, grassfed butter
1/4 cup water
Heat the pan to melt the butter over medium low heat. Crack the eggs into the pan. Let cook until the white begins to set, and then carefully pour the water around the outside edge of the pan. Quickly cover and simmer for two minutes, or until the centers are set the way you like them.
Meanwhile, have your favorite hollandaise sauce standing by. I love the blender version in “The Joy of Cooking.” Toast 2 slices foccaccia, cut lengthwise in half. Slice an avocado into pieces and 1 heirloom tomato. Have a bunch of large basil leaves on standby as well.
For plating: place foccaccia toasts in center. Top with tomato slices, then eggs, avocado, and basil leaves. Pour sauce over the top. Garnish with more fresh whole basil leaves and serve immediately, passing any extra sauce. Yumdillyicious!

I have just recently started using raw milk. I go out once a week with jugs and i have learned how to make mozzerella from it as well. I have been using natural eggs for some time now. I like to use them in creme brulee and vanilla french toast with fresh berries…i also like to use them for an omelet using a local vendors salsa on top. I like being in touch with my food producers as much as possible!
I love to use fresh eggs to cook a breakfast for my family on weekends. We spend quality time at the table talking together while enjoying scrambled eggs, french toast and orange juice. Nothings better than family, fresh eggs and fun!

Fresh eggs in any baked item….especially chocolate chip cookies stirred together with my grand girl. Cracking the eggs and measuring the flour are her favorite parts!

I would love to have a chicken coop.. It would be a great way to teach my kids responsibility, raising your own food, and how to go green!! My all-time favorite way to use fresh eggs was to get homemade bread (grandmom’s recipe), cut a hole in the middle and fry the egg in the middle. It used to fascinate me as a child how my grandmother used to keep the egg there. Just doesn’t taste the same with a store bought egg.

I like to make my husband his favorite homemade custard. I normally triple the recipe as he loves it so much and loves to take any left overs in his lunch for work. We also make homemade noodles. My favorite is deviled eggs.

I like to use fresh eggs in a Fritatta. I sneak in finely chopped asparagus so my kids think it is green onion. They eventually figure it out, but by then it is too late and they have eaten their veggies!

Frittata
I love using my birds’ eggs to bake southern cakes and cookies for the darling kids I help take care of. For the grown folks a kale and caramelized onion frittata with veggies from our garden or eggs benedict over fresh pork belly from the market.

My favorite way to use fresh local eggs is in baking. My seven year old daughter and I love to spend our fall weekends baking all sorts of yummy treats. Muffins, breads, cookies and cakes! We go through a whole lot of eggs in our kitchen.
We use our fresh eggs in quiches or German pancakes.
Fresh eggs are best plain and simple so you can taste the yolk. I love sunnyside up eggs with buttered toast. Free range chickens have the best tasting eggs. Eating bugs and grass really affects the taste

I LOVE eggs any way! Poached, fried, sunny side up, soft boiled, hard boiled, etc. my favorite is on a BLT sandwich topped with a sunny side up egg! Oh so good!

When cooking farm fresh eggs I maintain the yolks by lightly frying or poach them. I maintain the yolk because there is nothing like a breaking into the center of an just cooked, egg fresh from the coop and seeing the dark orange or deep yellow of a yolk ooze onto your plate. A simplet yet obvious sign of freshness and the deliciousness that you are about to consume.
