When it comes to desk lunching, the struggle is real. It’s hard enough taking a midday meal seated at a desk when all you really want to be doing is enjoying a leisurely lunch outdoors. To add insult to injury, our culture’s most pervasive lunch staples—peanut butter and jelly, ham and cheese, turkey sandwiches—don’t exactly inspire.
That’s why we’ve stepped in to add variety to the work lunch. We’re not the only ones; there’s even a movement on social media that’s dedicated to encouraging more exciting workweek provisions: #notsaddesklunch. This week, we’ll be doing our part by sharing low-maintenance, high-payoff lunch ideas so good, you’ll almost forget there’s a full email inbox in the background. The best part is that all of these meals can be made ahead; we love to double the recipe for dinner and save half for lunch the next day, that way we can enjoy something different every day of the week.
