Lucky Mint Milkshake
Ingredients
- 1 pint (473 ml.) non-premium vanilla ice cream
- 3/4 cup whole milk
- 1/2 cup mint syrup (recipe below)
- 1 tsp. peppermint extract
- 4 drops green food paste (optional)
- Sweetened whipped cream for serving
Directions
Add all ingredients to a blender and blend until smooth. Top with whipped cream. Serves 2.
Mint Syrup
- 1 cup sugar
- 1/2 cup water
- 1 Tbs. corn syrup
- 2 cups torn mint leaves and stems, dried thoroughly
Directions
Boil sugar, water and corn syrup to 230°F. Add mint, cover and let steep until syrup cools to room temperature. Strain the mint leaves, pressing to extract the syrup from the leaves. Keep syrup in the refrigerator until ready to use. Makes 3/4 cup.
*Tip: A truly authentic version of this seasonal shake is very sweet and very green—feel free to adjust the amount of simple syrup and food coloring you add to your liking.
Adult-Only Extras: Add Baileys Irish Cream or creme de menthe to the milkshake. For a chocolate version, add chocolate syrup to the blender with the rest of the ingredients and top whipped cream with chocolate shavings.
