These aren’t really ‘classes’ – they’re demonstrations by well-meaning store employees. I was hoping to learn a little more about decorating cookies this morning, but the demonstration wasn’t very successful. I think the employee made a good effort, but she didn’t even have the basic equipment she needed to do the demonstration (pastry bags, a timer for the cookies, etc.) I think Williams-Sonoma does itself a disservice when the person doing the demonstration isn’t prepared, and can’t even really complete the recipe. I’ve been to two of these classes, in two different cities, and I don’t think I’d bother again.
Why would I use just egg yolks in “sugar” cookies and not whites? How does the yolk and egg whites effect the cookies?

Is there an age limit to participate in a technique class?

Where are the cooking classes held? My Williams- Sonoma is SO small, I can’t imagine a class going on in the store. Also what usually happens during these classes. Will the “students” actual cook something or will it just be a W/S employee demonstrating? Thanks!
