It’s no secret how much we love Gaby Dalkin, the blogger behind What’s Gaby Cooking? It’s been almost two years since we first asked her to create some special seasonings for us to feature in our stores and online. Now, with a bunch of new offerings rolling out, we asked Gaby to come up with a few recipes that really showcase her creations. And she has outdone herself. Here are six of our favorite recipes. Go ahead and read the rest of this post, but then get shopping and then get cooking!
1. Chicken Shish Kabobs
Originally her dad’s recipe, Gaby took these chick shish kabobs and put her own spin on them. There are a few secrets to making them amazing. First, keep the chicken pieces nice and tight on the skewer (this will ensure they come off the grill extra juicy). You’ll also need three tablespoons of Gaby’s Go To Seasoning blend and either her basil vinaigrette or her very own cilantro vinaigrette recipe. Eat the kebobs as they are, on top of a salad or rice, or wrap them up in a pita with some grilled vegetables.
2. Grilled Flank Steak with Poblano Pico
Three things make this the most perfect recipe: the steak, the salsa, and the spice rub. Let’s break each of these down, shall we? Flank steak is a lean cut with loads of beefy flavor, which only intensifies when you grill it. (If you ask us, flank steak is best when it’s made on the grill.) The salsa here highlights the slightly smoky poblano pepper—plus tomatoes, onions, jalapeños, lime juice, cilantro, and salt—and adds a nice touch. Then there’s the All Things Meat Seasoning, which goes with every kind of meat you might be cooking up; and features a custom combination of brown sugar, garlic, paprika, cumin, and more.
3. Avocado Kale Caesar
Most of us dress our salads but then we skip the most important step: seasoning it! Yes, as in salt and pepper—or, in this case, Everything But the Bagel Seasoning. Gaby’s special blend includes garlic and onion, poppy seeds, and toasted white and black sesame seeds—the perfect savory mix for this kale caesar. Oh, and the super creamy vegan dressing comes together in no time with some tahini, lemon, oil, and garlic.
4. Vegetarian Quinoa Bake
Perhaps the tastiest and easiest Meatless Monday meal you’ll ever find, this skillet dinner relies on some leftover quinoa and just a few additional ingredients. Mostly, you’ll just need cheese, beans, corn, and some of Gaby’s Salsa (there’s chipotle salsa, tomatillo salsa, or a guacamole starter and any of them will do the trick!). Mix everything up, put it in the skillet, and top the whole thing off with more cheese before you bake it.
5. Huevos Rancheros
If you have 30 minutes to spare this weekend, you simply have to spend the time treating yourself to this special brunch. (It’s Gaby’s go-to on a lazy morning.) You’ll start by smearing some of Gaby’s famous Chipotle Salsa (which you can get in this trio kit) and some warm refried beans on freshly fried corn tortillas. Top that with a fried egg, some avocado slices, queso fresco, and enjoy!
6. Easy Mexican Shredded Chicken
This recipe is for those who love meal prep. Because it turns six chicken thighs into a big batch of shredded chicken that can be mixed into quinoa, tossed into pasta, or even thrown on top of a pizza. Once again, you’ll need one of Gaby’s Salsas (in case you didn’t pick up on it, there are tons of ways to use her salsas!) and you’ll get super flavorful meat that’s supposed to last you a few meals but, um, might not.
