From mashed potatoes and sourdough stuffing to cornbread and sweet potato casserole, much of the Thanksgiving table is actually peasant cuisine — simple, straightforward food prepared from humble, affordable ingredients. If there’s one thing you splurge on this Thanksgiving, however, make sure it’s the turkey. Not only is the big bird the centerpiece of the holiday meal, it’s also the one dish where quality truly matters.
Typical supermarket turkeys are frozen, and the birds are raised indoors on a diet of mass-produced feed, which contributes to flavor loss. For the most flavor, look for a heritage turkey breed that’s been free to roam outdoors, as well as a turkey that’s been fed an all-natural or organic diet.
We swear by Willie Bird fresh turkeys for several reasons. First, they’re a breed selected for having plenty of juicy breast meat. Second, they’re free-range animals that have plenty of space to run up and down the hills of Sonoma, CA — a factor that helps develop their succulent texture. Third, they’re fed an all-natural diet that’s supplemented with insects on the farm, which contributes to their great flavor. And finally, they’re shipped fresh to you from the farm, and never frozen, which means there won’t be any dryness or loss of flavor.
