Two little words: Summer. Weekend. Just saying them aloud makes us want to celebrate. Yes, there are weekends all summer long, but that doesn’t mean we shouldn’t look for a way to make every day of each weekend feel like a vacation. Eden Passante of Sugar and Charm couldn’t agree with us more, and the shared thought inspired her recipe for this tropical-inspired cocktail. “Picture it!” Eden suggests. “Sitting on the beach, toes in the sand, sipping on one of the best frozen piña coladas as a gentle ocean breeze surrounds you. THAT is this cocktail in a cup!” Her process is simple: Five easy-to-find ingredients and a blender. “It’s so refreshing,” Eden enthuses. “Full of pineapple flavor and not too sweet.” She makes each drink extra special by pouring the frosty concoction into a snifter before dropping in a pineapple-inspired pick loaded with fresh fruit and a sweet luxardo maraschino cherry as a final flourish before serving.
Frozen Piña Coladas
5 oz white rum
3 cups frozen pineapple cubes
2 oz pineapple juice
2 oz coconut cream
squeeze of orange juice
Combine all of the ingredients in a blender. Process until smooth, 2–3 minutes. Pour into glasses and serve. Serves two.
