Gaby Dalkin, cookbook author and the mind behind What’s Gaby Cooking, has a new seasoning out, and boy, is it a delicious breeze! Lemon, roasted garlic, black pepper, oregano, Parmesan and even nutritional yeast (known for its umami boom of flavor) all make cameos in this mix. Hey, we’d expect nothing less than this level of genius from the brain behind “Tastes Like Pizza” mix!
On weeknights, as you know, you just want things to be a little easier. Whether the dog is being demanding, the kid is melting down, the partner has had A Day, or you’ve just had it with the universe, you want someone to cut you a break. There’s something about having roasted pepper already spun into this spice mix, and not having to crack the pepper yourself, and having both lemon oil and juice in there that just feels like a boost, turning a half-hour supper into a 20-minute one. Sometimes 10 minutes makes all the difference in the world.
As Gaby writes on her site, “WGC is a celebration of what it’s like to live the California Girl Life.” That means keeping it simple, silly, especially at supper. So snag the mix, check out Gaby’s full line of awesome (that cheese board, hubba hubba), and follow supper with her brownies, of course!
Gaby Dalkin’s Lemon Pepper Chicken Pasta
- 12 oz spaghetti
- 2 Tbs. olive oil
- 5 cloves garlic, roughly chopped
- 1 shallot, roughly chopped
- 4 oz (115 g) shiitake mushrooms, sliced
- 6 oz (170 g) cremini mushrooms, sliced
- 1 lb. (450 g) chicken thighs, cut into 1-inch pieces
- 1–2 tsp. Gaby’s Lemon Pepper Parmesan seasoning
- 1 lemon, zested and juiced
- 1 bunch chives, snipped
- Handful of shredded Parmesan cheese
Bring a large pot of water to a boil. Cook pasta according to the package directions, drain and set aside.
In a large skillet, warm the olive oil over medium-high heat. Add the garlic, shallot and mushrooms and sauté for 6–7 minutes, until tender. Add the chicken and sauté until fully cooked, about 10 minutes more. Season with the Lemon Pepper Parmesan seasoning and stir to combine.
Once the chicken is fully cooked, add the drained pasta, lemon zest, lemon juice and chives. Toss everything together and adjust seasoning as needed. Serve with cheese mixed in.
