Eggs are nutritious, convenient and inexpensive, which makes them ideal for just about any occasion. So why do we relegate them to the realm of breakfast?
If we could nominate one food for the Best All-Around Award, it’d be eggs. With their modest calorie count and generous amount of protein and vitamins B and D, we turn to the ovoid for lunch, dinner, snack time and more (even times of hangover desperation!).
Don’t believe us? Here are five reasons that will do the convincing all on their own.
Bucatini alla Carbonara
Think of this very traditional Roman pasta of cured pork, eggs and aged cheese as the dinner equivalent of bacon and eggs. The pasta just makes the whole thing even better. |
Vegetarian Bibimbap
Bibimbap, which means “mixed rice,” is a popular Korean dish of white rice, mixed vegetables, sliced beef and a fried egg. This lightened-up meatless version omits the meat and swaps the white rice for whole-grain brown rice instead. |
Shirred Eggs
These eggs, which are baked with paprika, spinach and heavy cream, are a wonderful way to start off the day. Bake them until the whites are firm and the yolks are runny, and serve them with toast for dipping. |
Brussels Sprouts and Potato Hash with Fried Eggs
This hash is a wonderful way to make use of leftover cooked potatoes and brussels. It’s also a complete meal that feels appropriate for any time of day. |
Chicken, Spinach and Avocado Breakfast Quesadillas
Quesadillas—particularly these, which are stuffed with chicken, avocado, tomato, spinach and scrambled eggs—make for a hearty snack any time of day. |
