Your guide to this project? A former French Laundry chef who has studied his craft in places like Georgia, Chicago, and Austin. Timothy Hollingsworth, member of our 2020 Chefs’ Collective and renowned chef, is simply a superstar. The former chef at Barrel & Ashes, a nouveau BBQ joint in L.A., chef Timothy is a Napa Valley restaurateur and winner of Netflix’s cooking competition show “The Final Table.” Formerly the Chef de Cuisine at Thomas Keller’s The French Laundry, he later opened his own L.A. restaurant, Otium. Soon, he’ll open his new San Francisco restaurant, All This Time. He has won tons of awards, including the James Beard Foundation’s Rising Chef of the Year Award, the San Francisco Chronicle’s Rising Star Chef Award – and placed sixth in the Bocuse d’Or. Timothy has also joined with Ask Chefs Anything to raise funds for immigrant workers in service industries affected by the current global situation.
The chef’s Thanksgiving menu is nothing short of genius. He shows you how to spatchcock your bird, brining it in orange and bourbon. His smoky gravy actually employs beef bones (and you’ll want it to douse every single side on your plate!) And smoked pecan pie is just as good as it sounds.
